This recipe will be ready in about 15 minutes. This is what you will need:

We all know eating carrots is good for your eyesight. Attributing to that can be Beta carotene in Vitamin A. More beneficial vitamins found in carrots are B vitamins, vitamin K, and potassium.

Dukkah

Toasting spices is something we don’t do enough. It really brings out the flavors. Dukkah is a condiment of toasted nuts, seeds, and spices. It’s a breeze to make, just throw the ingredients in a pan at medium heat, and toast for a few minutes. Here’s what you’ll need for this Dukkah recipe:

  • Chopped Pistachios
  • Sesame Seeds
  • Cumin
  • Coriander
  • Red Pepper Flake (optional)

Stir the spices as they toast. Once they become fragrant, the spices and seeds are done toasting.

Fresh Herb

The finisher. Top your dish off with a sprinkling of fresh chopped thyme. If you’re not a thyme fan, dill would be good too.

How to Make It

This easy side dish can be put together in 15 minutes. Here’s how…

  1. Wash & peel outer skin of carrots. Using vegetable peeler, peel carrots into ribbons. See video in recipe card.
  2. Whisk or shake up dressing ingredients. Drizzle on top of carrots.
  3. Toast Dukkah ingredients on stove top for a few minutes. Sprinkle on top of carrots. Enjoy!

When peeling carrots, you will get to a point when the carrots get hard to hold and peel. Chop up these spindly carrots for salad, soup, or snack. Or use them for play. They resemble Harry Potter wands… you’re welcome.

Be sure to assemble right before enjoyment. The carrots will get softer the longer they sit in the dressing.

Equipment

Ingredients
  

  • 2 lbs Carrots about 6-8 larger carrots
  • 3 tbsp Olive Oil extra virgin
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Maple Syrup pure
  • 1/2" knob Fresh Ginger or 1/8 tsp ground ginger
  • 1/4 tsp Sea Salt
  • 1/2 tbsp Fresh Thyme chopped

Dukkah Ingredients

  • 1/4 cup Pistachios chopped
  • 1 tbsp Sesame Seeds white or black
  • 1 tsp Coriander ground
  • 1 tsp Cumin ground
  • 1/4 tsp Sea Salt

Instructions
 

  • In a small skillet, over medium high heat, toast the Dukkah ingredients. Toss or stir while toasting. Toast for 3-4 minutes until fragrant. Set aside.
  • Peel outer skin of carrots, discard. Peel carrots into ribbons using vegetable peeler, see video. Once all carrots are peeled into ribbons, make dressing.
  • For the dressing: in a small bowl with whisk, or lidded jar, put olive oil, lemon juice, maple syrup, and ginger. Whisk or shake to incorporate.
  • Drizzle desired amount of dressing on to carrots, toss to coat. Sprinkle with dukkah and fresh thyme, toss. Put in serving bowl & enjoy!
