Almond Encrusted Cod Ingredients

Cod fillets
Cod is a mild, flaky white fish that’s naturally low in fat, carbs, and calories, making it a light yet satisfying choice. Cooking time will vary depending on the thickness of the fillet, so be sure to adjust accordingly. You can use a whole fillet or pre-portioned cuts—whichever suits your needs best!
Almonds
For the almond crust, use a mix between almond flour and sliced almonds. If you don’t have almond flour, put a cup of almonds in a food processor and whiz them up. Or regular flour will work too.
Break up the sliced almonds by slightly crushing them in your hand while placing them into the mix. Using both textures of almonds makes this fish so good.
Spices
Put your favorites in the mix. Here’s what I like:
- Paprika
- Granulated Garlic
- Salt & a pinch of White or Cayenne Pepper

Greek Yogurt Hollandaise Sauce
Don’t get me wrong—this cod is incredibly flavorful on its own. But if you’re someone who loves a good sauce with fish, this one is a must-try! Who can resist a rich, velvety hollandaise? This version is lightened up and comes together in about 20 minutes. It takes a little longer than the fish, but trust me, it’s worth it.
Hollandaise is a classic French sauce traditionally made with egg yolks, butter, and lemon juice, often served on Eggs Benedict or drizzled over asparagus. In this healthier twist, we’ve swapped the butter for Greek yogurt, creating a lighter version that’s still creamy, tangy, and irresistibly delicious!

Healthy Hollandaise Ingredients
- 1 cup Greek yogurt
- 3 Egg yolks
- 2 tsp Lemon juice
- 1 tsp Dijon mustard
- 1 clove Garlic, minced
- 1 tsp Honey
- 1 tsp Salt
- Pinch of Cayenne
How to Make Almond Encrusted Cod & Hollandaise Sauce
This cod recipe can be air-fried, broiled, or baked. I like it best broiled. The almonds get nice and toasty on top and the fish cooks in about 8-12 minutes.
Almond Encrusted Cod is delicious on its own. But if you feel like leveling up your dinner, make the Hollandaise sauce to go with.
Hollandaise Sauce
Start making sauce by whisking together egg yolks, Greek yogurt, garlic and lemon juice in a glass bowl.


Put bowl over a pot with 1″ of simmering water (double boiler), continue to whisk over heat until sauce thickens, about 15 minutes. Remove from double boiler and add in rest of ingredients and stir. Set aside.
While sauce is cooking, press top of fish in almond mixture, lightly spray with olive oil and broil at low to medium for 8-12 minutes depending on the thickness of your cod fillet. Cod is ready at 130 degrees.


Put a spoonful of the sauce on your plate before placing the cod down. Or drizzle the sauce over the cod, garnish with fresh herbs, and serve!

Almond Encrusted Cod
Equipment
Ingredients
- 1 lb. Cod filet
- 1/3 cup Sliced Almonds
- 2 tbsp Almond Flour or pulse 2 tbsp of almonds in food processer
- 1/4 tsp Paprika
- 1/4 tsp Granulated Garlic
- 1/4 tsp Salt plus more for season fish
- 1/8 tsp White or Cayenne Pepper optional
- 1 tsp Olive Oil extra virgin
Instructions
- Preheat broiler to low or medium heat. Using paper towels blot cod to dry. Season cod by lightly sprinkling with salt.
- On a platter or dish mix 1/3 cup sliced almonds (crunching them to slightly break up), 2 tbsp almond flour, 1/4 tsp paprika, 1/4 tsp garlic, 1/4 salt, pepper (if using). Press the top of cod into the almond mixture. If any of mixture is left, press into cod. Place on sprayed sheet pan.
- Drizzle with olive oil. Place pan 4" or so from top of oven. Broil for 8-12 minutes until internal temperature is 130℉.
- Enjoy as is or serve with Healthy Hollandaise sauce (see post for recipe).
