Easy & Healthy Chunky Artichoke Dip – No Cream Cheese

Do you have that one dish that you look forward to every family get together? The one that your aunt brings, that you only get to enjoy once or twice a year. For me, it’s this recipe. My Aunt Karen brings Chunky Artichoke Dip every Christmas or Easter, for the appetizer buffet. It’s so good, it’s so easy, and healthy too.

How to Make this Healthy Chunky Artichoke Dip

It’s as easy as whisking up the dressing ingredients in the bowl first, dumping in the rest of the ingredients, and giving it a stir. Yes. That is it. No baking required. This recipe can easily be doubled. If you are serving more than 4 people, I would recommend it.

Can it Be Made a Day Ahead?

Yes! Mix it up and stick it in the fridge for up to 4 days.

Kick it Up with these Mix Ins

This dip is a crowd pleaser. It’s mild, refreshing, and light. Want to add a little more punch? Throw in any of these to kick up the flavor:

  • Hot Sauce
  • Feta Cheese
  • Green or Black Olives
  • Red Pepper Flake
  • Pimentos

What to Dip?

The possibilities are endless here. Here are a few healthy ideas:

  • Organic Triscuits (only 3 ingredients!)
  • Mini Bell Peppers, cut in half, seeds removed
  • Zucchini Slices
  • Mary’s Gone Crackers (gluten free)

It’s NOT Just a Dip

I’m telling you, this will be your new favorite condiment too! There are so many options with this dip. Here are a few besides just a dip:

  • Put it on a Sandwich or Wrap: Add a little flavor enhancer on your next sandie or wrap. This goes great with turkey or chicken (nitrate-free) lunch meat & a slice of cheese.
  • Make it a Meal – add in an Egg: Mix 1/2 a cup of Easy & Healthy Chunky Artichoke Dip with a chopped hard boiled egg. Eat with a fork, crackers, or on bread.
  • Stuffed Chicken Breasts: slice a pocket in the side of your raw chicken breast. Stuff in the dip, grill or bake until chicken is done (165 degrees). Or just put on top when chicken is done.

Ingredients
  

  • 1 can Artichoke Hearts, in water whole or quartered, drained & chopped
  • 4 tbsp Parmesan Cheese grated
  • 1/4 cup Red Bell Pepper small dice
  • 1.5 tbsp Capers
  • 1 tbsp Leek chopped, optional
  • Pinch or 2 Salt / Fresh Ground Pepper optional

Dressing Ingredients

  • 2 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Olive Oil extra virgin
  • 1/2 tsp White Wine Vinegar
  • 1 Garlic Clove
  • 1/4 tsp Thyme (dried) 3/4 tsp Fresh Thyme
  • 1/4 tsp Dill weed (dried) 3/4 tsp Fresh Dill
  • Pinch Salt

Instructions
 

  • In a medium mixing bowl, micro-plane (or mince) garlic. Add the rest of the dressing ingredients and whisk.
  • Chop artichoke hearts, red bell pepper, leek. Add to bowl with dressing. Add the capers and Parmesan to bowl too. Stir.
  • Add a pinch of salt and a few grinds of fresh pepper, if desired.
  • Serve with halved mini bell peppers, zucchini slices, or whole wheat crackers.

Notes

This recipe makes about 2 cups. If you are serving more than 4 people, better double it.
Always taste your food before salting. Since this has capers as an ingredient, which are salty by themselves, you don’t want to add too much more salt.
This can be made a day ahead and kept in the fridge for up to 4 days.
