Cucumbers
Cucs are an excellent source of hydration. With a water content of around 96%, cucumbers can help keep you cool and hydrated. They also contain:
- Vitamin C, vitamin K, and potassium
- Are low in calories
- High in antioxidants
If you don’t have homegrown cucs, English cucumbers, the longer skinnier ones, or the mini cucumbers are both great options.

Tajin
Tangy and irresistible, Tajin is a tasty blend of mild chili peppers, lime and sea salt. It’s perfect sprinkled on top of so many things, especially this Tex-Mex Salad.
If you think tajin will be another spice that hangs out in your cupboard for an eternity, think again. This delightful spice blend is fantastic on so many things, especially fruit:
- Mangoes
- Pineapple
- Watermelon
- Eggs
- Corn

How to Cut the Cucumbers
No matter how you slice it, this crisp snack is tangy and delicious… and so dang easy!
- Slices
- Sticks
- Quarter Chunks
It doesn’t matter how, just make this snack happen. A mandolin is the easiest way to cut up a cucumber in uniform pieces.
Cut, Sprinkle, Enjoy
Once your cucs are cut to desired shape, sprinkle them with tajin, and enjoy. That’s it. Seriously, that’s it!
These make the perfect afternoon snack. When you want something crunchy, and don’t buy chips, because you would eat the whole bag (guilty), slice up some cucs and sprinkle with Tajin!
If you need a recipe to follow, see below, but it’s the easiest thing you’ll ever make. Simple and delicious.
English cucumbers tend to be “burpless”. If using English or mini cucumbers no need to remove seeds, unless you don’t prefer them. Homegrown cucumbers tend to have a lot more seeds. To remove these seeds, cut the cucumber in half lengthwise. Using a spoon scrape out the seeds.
The skin is where a lot of vitamins and minerals are at, however, the store-bought cucumbers that aren’t wrapped in plastic (like the English cucumbers) are covered in an edible wax to help preserve them. Peel this off if you don’t prefer.

Cucumbers with Tajin
Equipment
- 1 Mandoline optional
Ingredients
- 1 Cucumber Homegrown or English or 3 Minis
- 1/2 tsp Tajin
Instructions
- Cut cucumbers into slices with a mandoline or knife.
- Arrange a single layer of cucumbers on plate or platter. Sprinkle with Tajin. Add another layer on top of that and sprinkle with Tajin. Repeat if necessary. Enjoy!
