Cheesy goodness mixed with pesto, yes, that’s right. Artichoke Pesto Dip with Greek Yogurt is a creamy concoction that is loaded with flavor. Perfect for dipping crackers or veggies, this dip is not only good as an appetizer but works well as a condiment or mixed with pasta.

Technically a thistle, artichoke hearts are a nutritious and delicious option to add into dishes. They’re low in fat, high in fiber, and packed with vitamins like C, K, and folate, along with minerals like phosphorus and magnesium.

As a rich source of antioxidants, artichokes come fresh, canned, or frozen. For a healthier choice, opt for unmarinated artichoke hearts, allowing you to control the fat content. If using canned whole artichokes, chop them for this dip.

Pesto

Vibrant and full of fresh flavor, pesto is one of my favorite condiments. It’s savory and herbaceous with a hint of creaminess and a bright, slightly tangy finish. Buy it already prepared or whip up a batch if you are growing basil.

Don’t waste the pesto! It freezes well, put pesto into smaller Tupperware containers. However, there are lots of options to use up that jar of pesto:

Cheese

This recipe calls for 2 kinds of cheese. Cream cheese brings the creamy tanginess, while Parmesan brings a salty nutty kick.

Greek Yogurt

A good source of protein, plain Greek yogurt helps bind this dip together. Use 2% or 5% for the best flavor.

How to Make

The most important thing to remember about this recipe is to pull out your cream cheese and let it come to room temp. Soft cream cheese makes life easier. If you have that down, the rest is a piece of cake.

  • rosemary
  • garlic
  • basil
  • red pepper flake

My favorite add-ins are fresh garlic and thyme.

The vehicle you choose to get this dip to your mouth is important. You don’t want just any old cracker. Here are some of my favorites:

  • pita crackers
  • roasted sweet potato rounds
  • zucchini slices
  • tortilla chips
  • mini bell peppers cut in half

What Else Can You Make with Artichoke Pesto Dip?

Stuffed Chicken Breast

This creamy goodness is not only delicious as a dip, but also as a condiment. Place a dollop of the artichoke pesto combo on top of grilled chicken breasts. Or if you’re feeling fancy, make a slit in the side of the breast and stuff it with the dip before baking.

Pasta Dish

Artichoke Pesto Dip is sensational with pasta too. Save back some pasta water to thin out the dip into a sauce and you have yourself a tasty main dish. Add in fresh spinach with the pasta for healthy bonus points.

Ingredients
  

  • 1 can Artichoke Hearts drained and chopped
  • 8 oz Plain Greek Yogurt 2% or 5%
  • 4 oz Parmesan Cheese grated
  • 4 oz Cream Cheese softened
  • 1/3 cup Pesto prepared
  • fresh cracked pepper, minced garlic clove, herbs optional

Instructions
 

  • Preheat oven to 350℉. Mix all ingredients together.
  • Scoop dip in oven safe dish and bake for 45 minutes or until golden brown on top.
  • Enjoy with fresh veggies, crackers, or chips.

Notes

Salt as needed, depending on the salt content of the pesto you use. With the pesto and parmesan that I use, I never feel like more salt is needed.
