Best Spinach Salad with Easy Pesto Dressing

This pesto dressing is so versatile. Use it in this salad, on top of grilled veggies, eggs, rice, you name it!

Ingredients
  

  • 2 cups Fresh Spinach
  • 1 cup Cherry or Grape Tomatoes halved
  • 1/4 cup English Cucumber chopped
  • 1/4 cup Feta, Mozzarella or Goat Cheese or diced Avocado or Olives
  • 2 tbsp Nuts or Seeds such as pine nuts, pumpkin seeds, sunflower seeds, or pistachios

Easy Pesto Dressing

  • 1 tbsp Pesto homemade or store bought
  • 1 tsp Olive of Avocado Oil
  • 2 tsp Lemon Juice freshly squeezed
  • 1 pinch Salt optional

Instructions
 

  • Put all Pesto Dressing ingredients in a bowl and whisk -or- mason jar with lid and shake. Set aside.
  • On a large plate, serving bowl or individual bowls (depending if it’s an entree or side salad) place spinach. Top with tomatoes and cucumbers. Then add cheese (or avocado/olives). Drizzle with dressing and top with nuts/seeds.
  • Enjoy!
