In a large bowl whisk together peanut butter, honey, vanilla.
Place a clean tea towel under the box grater. Grate apple. Gather corners of towel, twist together. In a separate bowl, wring the moisture out of the apple. (Discard or drink juice.) Then, stir grated apple into the wet mixture to prevent browning.
In a medium size bowl add in dry ingredients. Whisk to incorporate. Stir dry ingredients into the wet until incorporated. Using a small cookie scoop or spoon, roll into balls.
Refrigerate energy balls, then enjoy!
