Easy Apple Cinnamon Energy Balls with Fresh Apple

These delightful balls have the Fall Flavors and pack a healthy punch. They are made with fresh apple, nut butter, honey, nuts, seeds and spices.

Equipment

  • 1 Box Grater
  • 1 Tea Towel
  • 1 small cookie scoop optional

Ingredients
  

Wet Ingredients

  • 1 small to medium Apple your favorite variety
  • 1/3 cup Peanut Butter or other Nut Butter
  • 1/4 cup Honey
  • 1/2 tsp Pure Vanilla

Dry Ingredients

  • 1 cup Oats quick or old fashion
  • 1/4 cup Walnuts or Pecans chopped
  • 3 tbsp Golden Raisins or Dried Cranberries or both
  • 3 tbsp Hemp Seeds or Chia
  • 2 tbsp Flax Seeds ground
  • 1 tsp Cinnamon
  • 1/2 tsp Ground Ginger optional
  • 1/4 tsp Salt a few pinches

Instructions
 

  • In a large bowl whisk together peanut butter, honey, vanilla.
  • Place a clean tea towel under the box grater. Grate apple. Gather corners of towel, twist together. In a separate bowl, wring the moisture out of the apple. (Discard or drink juice.) Then, stir grated apple into the wet mixture to prevent browning.
  • In a medium size bowl add in dry ingredients. Whisk to incorporate. Stir dry ingredients into the wet until incorporated. Using a small cookie scoop or spoon, roll into balls.
  • Refrigerate energy balls, then enjoy!

These balls freeze well.
