Who doesn't love a cookie! Start your day off right with a wholesome one. They're easy to make, kids love them, and they freeze well. So, make a batch and freeze half for the following week.
Preheat oven to 350 degrees. In a medium mixing bowl, mash bananas with a fork. Add rest of wet ingredients, and whisk together. Set aside.
In a large mixing bowl, whisk together dry ingredients.
Add the wet ingredients into the dry ingredients. Mix until just incorporated. With a medium cookie scoop (or spoon), scoop into golf ball size balls. Place on greased cookie sheet and flatten slightly.
Bake for 10-12 minutes, until they no longer look wet, and are starting to get golden. Let cool. Enjoy!

To store, place in airtight container for up to 4 days. Can also be kept in fridge. These freeze well. Once cooled completely, place in freezer zip bag and freeze.Change up the recipe by adding nuts, seeds, spices. Swap out flour for gluten free options. Swap out peanut butter for sunflower butter.
