Peanut Butter Energy Balls

No baking, ready in 15 minutes, these delicious energy balls are your new favorite snack.

Equipment

  • 1 small cookie scoop optional

Ingredients
  

  • 2 cups Quick Oats
  • 3/4 cup Natural Peanut Butter creamy or crunchy
  • 1/2 cup Raw Honey
  • 1/2 cup Almonds chopped
  • 1/4 cup Flax Seeds ground
  • 1/4 cup Chia Seeds
  • 1/2 cup Mini Chocolate Chips
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp sea salt optional

Instructions
 

  • In a large bowl, add all ingredients.
  • With a spatula or heavy spoon, mix all ingredients together.
  • Roll into 1" to 1.5" balls, using a small cookie scoop and your hands.
  • Enjoy! Put in air tight container in the refrigerator for up to a week.

Notes

These Energy Balls freeze well.
If you have a nut allergy, or want to pack these in your kid's lunch for school, swap out the peanut butter and almonds for sunflower butter and sunflower seeds.
Swap out the chocolate chips for Cacao Nibs.
Add in 1/4 cup of Goji berries.
Add in Sprinkles.
