Pina Colada Energy Balls with Fresh Pineapple

Equipment

Ingredients
  

Wet Ingredients

  • 1/2 cup Almond Butter or any nut butter
  • 1/4 cup Raw Honey
  • 1 tsp Vanilla
  • 8oz can Pineapple-crushed (or 1/3 cup fresh chopped) juice squeezed out & discarded

Dry Ingredients

  • 1-1/2 cups Oats old fashion or quick
  • 1/4 cup Flaxseed milled
  • 1/2 cup Coconut Flakes unsweetened
  • 1/2 cup Macadamia Nuts chopped
  • 1/4 tsp Sea salt optional
  • Zest of 1 orange optional

Instructions
 

  • Whisk together nut butter, honey, and vanilla.
  • If using canned pineapple, drain pineapple. Dump pineapple (canned or if using fresh) onto tea towel. Gather tips of towel together at the top, twist towel, ringing out the excess juice. Place pineapple in bowl with other wet ingredients. Stir to combine.
  • Add in the dry ingredients to the wet. Stir until combined.
  • Roll into balls using a cookie scoop or spoon. Refrigerate and enjoy.

Notes

Keep refrigerated for up to 5 days.
These can be frozen in an air-tight container for up to 90 days.
Dried pineapple can be used instead of fresh.
If you don't squeeze out all the excess juice, they will get soggy.
