Quick and Easy Meatloaf Meatballs

Meatloaf made easy with these meatballs. Brush each meatball with the tangy sweet sauce and make a side of mashed potatoes. These Meatloaf Meatballs will be ready in 30 minutes.

Equipment

Ingredients
  

  • 2 lbs Ground Beef, Pork, or Turkey or a combo
  • 1 cup Oats quick or old fashion
  • 2 large Eggs
  • 1/2 - 1 cup Onion diced
  • 2 cloves Garlic minced
  • 1/3 cup Ketchup, BBQ Sauce, Mustard or Tomato Sauce
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Cumin
  • 2 tsp Parsely dried
  • 1 tsp Paprika
  • 3/4 tsp Salt
  • 1/2 tsp Pepper

Sauce for Meatballs

  • 3 tbsp Ketchup or BBQ Sauce
  • 2 tbsp Mustard
  • 2 tbsp Honey

Instructions
 

  • Preheat oven to 375 ℉. Spray baking sheet with pan spray and set aside. In medium sauce pan, sauté onions until translucent, add garlic and cook for 30 seconds. Remove from heat.
  • While onions are cooking make sauce. Whisk together 3 tbsp. ketchup, 2 tbsp. mustard, 2 tbsp. honey. Set aside.
  • In large bowl whisk 2 eggs, 1/3 c. ketchup, 1 tbsp Worcestershire sauce, and spices (2 tsp parsley, 1 tsp cumin, 1 tsp paprika, 3/4 tsp salt, 1/2 tsp pepper). Add onion and garlic mixture and 1 cup oats, stir.
  • Add ground meat to egg mixture. Using hands work together until combined.
  • Roll into balls slightly bigger than a golf ball. Place on baking sheet. Brush each meatball with sauce. Bake for 12 minutes. Switch oven to broil. Broil for 2-3 minutes until sauce is caramelized and meatballs temp at 160℉. (If using turkey, temp at 165℉).
  • Serve with mashed potatoes and enjoy!

Notes

*This recipe is a big batch for a family of 4. Make batch and freeze leftovers for a meal in a few weeks. Set frozen meatballs the night before in refrigerator to thaw. Make another batch of sauce for meatballs. To heat up, use microwave, or low broil.
*I like to use a combo of beef and pork or beef and turkey.
*The egg mixture can be made ahead to save time.
