Refreshing Watermelon Mint Granita

Bring on summer with this delightful cool treat. No added sugar just delicious frosty watermelon scooped in a dish or made into a drink. Keep yourself (and kids) hydrating with Watermelon Mint Granitaor make it into a slushie.

Ingredients
  

  • 10 cups Watermelon Chunks rind removed
  • 1 Lime juiced
  • Handful Mint leaves

Instructions
 

  • Place watermelon, lime juice, and mint in food processor. Blend until smooth and no watermelon chunks remain.
  • Pour into metal pan. Place in freezer for 45 minutes.
  • After 45 minutes, using a fork, scrape down the sides and break up any chunks of the watermelon puree. Repeat this process, freezing for 45 minutes and forking until your watermelon mixture is frozen into little flakes. Should only take 2 to 3 times of freezing.
  • Scoop into dish and enjoy with a spoon or add coconut water or seltzer water for a refreshing drink. This is also nice made into an adult beverage with a shot of your favorite booze and coconut water.
