Ingredients
What makes this salad pop are the sweet and tangy berries mixed with creamy avocados and the crunch of almonds. Drizzle a simple yet delicious honey balsamic dressing over the top and viola, perfection.
Berries
Choose your favorite berries for this salad. My go to are blueberries and strawberries, but raspberries and blackberries are also excellent in this recipe.
Greens
Anything goes for this recipe, here are your options:

Rotisserie chicken is an easy go to for added protein. To make life easier:
- De-bone chicken
- Chunk it up into bit size pieces
- Portion it out
- Freeze what you won’t use up within 3 days

Easy Berry Avocado Almond Salad with Honey Balsamic Dressing
Ingredients
- 3 cups Spinach or Arugula loose packed
- 4 Strawberries quartered
- 1/2 cup Blueberries
- 1/4 Avocado diced & sprinkled with salt
- 2 tbsp Goat Cheese crumbled
- 1 tbsp Almonds sliced or slivered
Honey Balsamic Dressing
- 1 tbsp Olive Oil extra virgin
- 1 tbsp Balsamic Vinegar good quality
- 1 tsp Raw Honey
- Salt & Pepper to taste
Instructions
- Place spinach and/or arugula on plate.
- Scatter berries, avocado, goat cheese, and almonds over the greens.
- Make Dressing: put all ingredients in to a small bowl and whisk well, or put them all in a small mason jar with lid and shake.
- Drizzle dressing over salad, and ENJOY!
