Ingredients

What makes this salad pop are the sweet and tangy berries mixed with creamy avocados and the crunch of almonds. Drizzle a simple yet delicious honey balsamic dressing over the top and viola, perfection.

Berries

Choose your favorite berries for this salad. My go to are blueberries and strawberries, but raspberries and blackberries are also excellent in this recipe.

Greens

Anything goes for this recipe, here are your options:

  • Spinach
  • Kale
  • Green Leaf Lettuce
  • Red Leaf Lettuce
  • Arugula
  • Spring Greens

Avocado

Creamy and packing a healthy punch, avocados are a perfect addition to this summery salad.

Goat Cheese

Creamy and tangy, goat cheese is a favorite of mine. If you aren’t a fan, omit or add feta.

Almonds

Any nut will work in this recipe, but I love the combo of berries with almonds.

Honey Balsamic Dressing

Just a few simple ingredients are needed to whip up this dressing. Shake is all up in a lidded container and you have a homemade dressing in less than a minute. Here’s what you’ll need:

  • Honey
  • Balsamic Vinegar
  • Olive Oil
  • Salt & Pepper to taste

Salads don’t have to be boring. If you like this salad recipe, you’ll love my post on 5 Healthy Salad Dressings.

Entree Salad

Make it a meal! Add in your favorite protein to make this Berry Avocado Almond Salad an entree.

Rotisserie Chicken

Rotisserie chicken is an easy go to for added protein. To make life easier:

  • De-bone chicken
  • Chunk it up into bit size pieces
  • Portion it out
  • Freeze what you won’t use up within 3 days

Doing this, you will have portioned out protein ready after a few minutes on defrost in the microwave. Many grocery or big box stores offer already de-boned rotisserie chicken. It doesn’t get much easier!

Salmon

Salmon is another delicious option in this Berry Avocado Almond Salad. If you are looking for an easy marinade for grilled or baked salmon, you will love this Glazed Sweet and Tangy Salmon recipe.

Beans or Quinoa

Beans and quinoa are both great sources of protein and healthy carbs. Cannellini beans go wonderfully with this, but my preference is quinoa. Quinoa mixes in delightfully with this salad.

Quinoa is so versatile. Throw it in a salad. Top it with an egg. Serve it as a side dish. If you like this salad, you’ll love this Carrot Cake Quinoa Salad recipe.

Side Salad

This easy salad makes a delicious side salad as well. Pair it with any main course. It especially goes well with this Glazed Sweet and Tangy Salmon recipe.

Ingredients

  • 3 cups Spinach or Arugula loose packed
  • 4 Strawberries quartered
  • 1/2 cup Blueberries
  • 1/4 Avocado diced & sprinkled with salt
  • 2 tbsp Goat Cheese crumbled
  • 1 tbsp Almonds sliced or slivered

Honey Balsamic Dressing

  • 1 tbsp Olive Oil extra virgin
  • 1 tbsp Balsamic Vinegar good quality
  • 1 tsp Raw Honey
  • Salt & Pepper to taste

Instructions

  • Place spinach and/or arugula on plate.
  • Scatter berries, avocado, goat cheese, and almonds over the greens.
  • Make Dressing: put all ingredients in to a small bowl and whisk well, or put them all in a small mason jar with lid and shake.
  • Drizzle dressing over salad, and ENJOY!

Notes

Good quality vinegar can be found at specialty olive oil and vinegar shops, spice shops, or online at https://thetastefulolive.com/ It doesn’t get much better than 18 year aged.
Pumpkin seeds, sunflower seeds, pistachios, or pecans would all be a delicious substitute for the almonds.
If you don’t like vinegar, as much as I do, do half the amount of balsamic.
This dressing can easily be multiplied to make some that lasts all week in your fridge.
