Obviously, Green Chilis are a must for this recipe. In short, there are 2 options: canned green chilis or 505 Southwestern Flame Roasted Green Chili. My suggestion is the 505. It’s spicy, smokey, and the perfect combo with eggs. And if you like deals, get 10% off.

Sautéed bell peppers, onions, and garlic are also incredible in this recipe. As a result, the sweetness in bell peppers and onions counter the spice of the green chilies. Creating both a slightly sweet quiche, and one with a little kick.

If you aren’t a pepper fan, mushrooms and spinach would also be delicious in this quiche.

Cheese

A quiche must have cheese. Given that, cheddar is an excellent choice for this Green Chili Crustless Quiche. Although, Monterey jack, pepper jack, or a combo, would be tasty too.

It’s easy to buy the pre-shredded cheese at the store. However, with that you get anti-caking additives on your cheese. Ick. It doesn’t melt as well as cheese you grate yourself. Taste the difference.

Whichever vessel you bake in, the prep is the same.

  1. Sauté veggies in butter until soft, remove from heat.
  2. Whisk eggs and Greek yogurt together, then add in green chilis.
  3. Stir veggies and cheese into egg mixture.
  4. Pour into prepared pan and bake until set.

The quiche is done when you shake the pan slightly and the eggs do not jiggle.

Crustless Quiche in a Dish

For a thicker quiche, then bake in an 8×8 baking dish. On the other hand, for a slightly thinner quiche, bake in a 9×11 dish.

If feeding a larger crowd, then stretch the recipe. A 9×11 pan will work with 8 eggs and a 1/4 cup more Greek yogurt. Or a 9×13 pan can be used with a total of 10 eggs and an extra 1/2 cup Greek yogurt. Equally, throw in more veggies if adding in more eggs.

Crustless Quiche in Muffin Tins

Using a muffin tin to bake quiche is a great way to meal prep for the week. Once baked and cooled, store in a storage container in the fridge for 3 days. After that throw the rest in the freezer for up to 3 months.

To warm up your egg cups, put them on defrost for 20-30 seconds. Every microwave is different, you may need to go a full minute.

This quiche is full of flavor, and doesn’t necessarily need any toppings, but if you’re feeling extra, any of the following would be delish:

  • Dallop of Greek yogurt
  • Hot sauce
  • More 505 Green Chili Salsa
  • A sprinkling of Tajin
  • Diced Avocado

Equipment

  • 1 8×8 Baking Dish or Muffin Pan

Ingredients
  

  • 6 large Eggs
  • 1 cup Plain Greek Yogurt 2% or 5%
  • 1/2 cup 505 Southwestern Green Chili or can of diced chilis
  • 1-1/2 cup Shredded Cheddar Cheese or Monterey / Pepper Jack
  • 1 tbsp Butter or Olive Oil
  • 1-1/2 cups Bell Peppers diced (any color)
  • 1 cup Onion diced
  • 2 Garlic Cloves minced
  • 1 tsp Cumin
  • 1/2 tsp Sea Salt

Instructions
 

  • Preheat oven to 350℉. Sauté bell peppers and onions in butter or olive oil until tender and slightly browned. Add in Garlic, cook for 1 minute. Remove from heat sprinkle lightly with a pinch or two of salt. Remove from heat, let cool slightly.
  • Whisk eggs, Greek yogurt, green chilis, salt, cumin. Stir in cheese and sauteed veggies. Pour into sprayed 8×8 dish or sprayed muffin pan. Bake 40-45 minutes for 8×8 dish, or 24 minutes for muffin pan.
  • Remove from oven when egg mixture doesn't jiggle when shook. Let cool for 15 minutes before serving.
