Green Chili Crustless Quiche Ingredients
Eggs
One can’t have quiche without eggs. The incredible edible egg is packed with not only protein.
Whole eggs are among the most nutritious foods on the planet, containing a little bit of almost every nutrient you need.
Kris Gunnars, BSc Healthline.com
In short, here are a few other health benefits of eating eggs, according to 9 Health Benefits of Eating Eggs at Healthline.com:
- Raises HDL (good cholesterol), lowering risk of many diseases
- Contains Choline, which builds cell membranes and helps with brain function
- High in protein
Undoubtedly, sounds like eggs need to be a staple every week.

Greek Yogurt
In truth, we go through Greek yogurt like it’s going outta style at our house. Like eggs, Greek yogurt has numerous amounts of health benefits. To name a few:
- It contains Iodine which is essential for thyroid function.
- Excellent source of vitamin B12, which helps prevent anemia.
- Typically produced with live cultures, it promotes gut health.
In this recipe, not only does Greek yogurt gives the quiche a nice texture, but also raises the protein grams.
Green Chilis & Other Veggies
Obviously, Green Chilis are a must for this recipe. In short, there are 2 options: canned green chilis or 505 Southwestern Flame Roasted Green Chili. My suggestion is the 505. It’s spicy, smokey, and the perfect combo with eggs.
Sautéed bell peppers, onions, and garlic are also incredible in this recipe. As a result, the sweetness in bell peppers and onions counter the spice of the green chilies. Creating both a slightly sweet quiche, and one with a little kick.
If you aren’t a pepper fan, mushrooms and spinach would also be delicious in this quiche.
Cheese
A quiche must have cheese. Given that, cheddar is an excellent choice for this Green Chili Crustless Quiche. Although, Monterey jack, pepper jack, or a combo, would be tasty too.
It’s easy to buy the pre-shredded cheese at the store. However, with that you get anti-caking additives on your cheese. Ick. It doesn’t melt as well as cheese you grate yourself. Taste the difference.
How to Make Green Chili Crustless Quiche: 2 Options
Whichever vessel you bake in, the prep is the same.
- Sauté veggies in butter until soft, remove from heat.
- Whisk eggs and Greek yogurt together, then add in green chilis.
- Stir veggies and cheese into egg mixture.
- Pour into prepared pan and bake until set.
The quiche is done when you shake the pan slightly and the eggs do not jiggle.
Crustless Quiche in a Dish
For a thicker quiche, then bake in an 8×8 baking dish. On the other hand, for a slightly thinner quiche, bake in a 9×11 dish.
If feeding a larger crowd, then stretch the recipe. A 9×11 pan will work with 8 eggs and a 1/4 cup more Greek yogurt. Or a 9×13 pan can be used with a total of 10 eggs and an extra 1/2 cup Greek yogurt. Equally, throw in more veggies if adding in more eggs.
Crustless Quiche in Muffin Tins
Using a muffin tin to bake quiche is a great way to meal prep for the week. Once baked and cooled, store in a storage container in the fridge for 3 days. After that throw the rest in the freezer for up to 3 months.
To warm up your egg cups, put them on defrost for 20-30 seconds. Every microwave is different, you may need to go a full minute.
What to Serve Green Chili Crustless Quiche With?
This quiche is full of flavor, and doesn’t necessarily need any toppings, but if you’re feeling extra, any of the following would be delish:
- Dallop of Greek yogurt
- Hot sauce
- More 505 Green Chili Salsa
- A sprinkling of Tajin
- Diced Avocado
This crustless quiche is both great on a breakfast buffet, and perfect for a grab and go breakfast. And delightful reheated.

Yes, spinach and mushrooms would also be tasty in this recipe. Stay away from veggies with a high water content.
Wrap a piece of the quiche or a quiche muffin in a paper towel. If in the refrigerator, microwave for 30 seconds. If in the freezer, defrost for 2 minutes.
