Easy Healthy Chicken Artichoke Recipe in 35 Minutes
This is the perfect weeknight meal. Throw these simple ingredients in a baking dish, and it’s ready 35 minutes later. This healthy chicken artichoke recipe is both warm and delicious, and easily customizable to fit your taste buds.
Chicken Artichoke bake is a spin on a recipe my mom used to make. Not only is it a healthy low-carb meal, but also one that the whole family will enjoy.

Chicken Breasts or Thighs
In order that this Healthy Chicken Artichoke Recipe is a quick meal, go boneless chicken. Since bone-in chicken takes a little longer to cook. If you prefer white meat, then select skinless chicken breast. For dark meat, go with skinless chicken thighs.
Chicken thighs are slightly higher in calories, fat, and cholesterol. But they are still loaded with nutrients and protein, so choose whichever you prefer.
Artichoke Hearts
While researching artichoke hearts, I learned that they are actually a thistle, not a vegetable. Who knew? This is a thistle you will want to eat, as it’s loaded with healthy properties. Artichokes are low in fat, high in fiber, and loaded with vitamins and minerals like vitamin C, vitamin K, folate, phosphorus, and magnesium. They are also one of the richest sources of antioxidants.

Artichokes come fresh, canned, or frozen. You can also get marinated artichoke hearts. To be sure of choosing a healthier option, steer towards unmarinated artichokes. In this case, you can control the amount of oil in your dish. Also, if you buy canned whole artichoke hearts, cut them in halves or quarters.
Artichoke hearts are an easy add to salads or pizza. Dip is another place you will find artichoke hearts. This Chunky Artichoke Dip Recipe is zippy, and sans dairy, no baking required.
Feta Cheese
Not only does feta bring a nice tangy taste and Mediterranean vibe to this healthy artichoke chicken recipe, it is also a low-fat, low-calorie cheese. However, because feta is brined, it is on the salty side. So, watch the amount of salt you add to this dish.
Not a feta fan? Swap it out for Parmesan cheese or goat cheese.
Tomatoes
I’ll say it, tomatoes can be weird. Especially outside of Summer in the Midwest. Therefore, cherry tomatoes are always a good pick in the colder months. In short, they’re typically never mealy.
If vine ripened tomatoes aren’t available, then here are the tomato options for this dish:
- Sun-dried Tomatoes
- Canned Tomatoes
- Cherry Tomatoes
Any of these will work with this recipe. Regardless of the season, my favorite tomato to use in this dish is cherry. In detail, their flavors get concentrated as they bake, and they burst with deliciousness.
Olives or Pepperoncinis
Kalamata olives, Spanish olives, or black olives all work in this recipe. However, if you want the best olive of all time, or if you think you don’t like olives, you must try Castelvetrano olives. These are my hands-down favorite olive. They are bright green in color, firmer and more mild than other olives.

They’re creamy, as if someone injected it with little hits of butter that melt on your tongue.

Still not convinced on olives? Try Pepperoncinis. They’re one of my favorite condiments. These brightly yellowish-green peppers are not only a great add to pizza, salad, and pot roasts, but also add a delicious zip to your dish. Tangy pepperoncinis come in mild, medium, or hot. Therefore, pick the heat level you’re comfortable with.
Mushrooms or Spinach
Add some vitamins to this dish. Adding fresh mushrooms will add B vitamins as well as Vitamin D. Mushrooms also add a different texture to this artichoke chicken bake.
Spinach offers many health benefits. Adding fresh spinach will add Vitamins A, C, & K1.
However, baking spinach for 30 minutes, will really cook it down. To keep the vibrancy of the spinach, place right-outta-the-oven chicken and goodies on top of a bed of fresh spinach when ready to eat. Not only will the heat from the chicken slightly steam the spinach, but also make it slightly softer and easier to eat.
For copious amounts of vitamins and minerals, use both mushrooms and spinach. Don’t like either? Just nix them both, this dish will still be fantastic.
Olive Oil or Avocado Oil
This recipe needs a little fat besides the olives. Drizzle with either olive oil or avocado oil to keep everything moist in the oven. This also adds a little bit of healthy fat to the dish.
Spices
Keep the spices simple with a little garlic, oregano, salt and pepper. Start by sprinkling the raw chicken with salt, fresh cracked pepper, and oregano. Take a microplaner, grate a few garlic cloves over the chicken, and rub it in.
The olives or pepperoncini will bring a punch of flavor as well as a little acidity to this dish. Boost that flavor with white wine or fresh lemon juice whisked with olive oil on pasta, rice, or quinoa. Any of these will make a perfect side dish.
Chicken Artichoke Cooking Options
Here are 3 options for cooking this Mediterranean flavored dish. Choose which is best for you.
Healthy Chicken Artichoke in the Oven
To point out, I mainly use my oven. The trusty oven is my pal and confidant (que the Golden Girl music). Simply put, this recipe is as easy as dumping in the ingredients and baking for 30 minutes. However, depending on how many chicken breasts are in your pan and how crowded it is, will determine your cook time.
In the past I have placed 4 chicken breasts in an 8×8 baker, and it took well over 40 minutes. They were too smushed together. I suggest a 9×13 baking dish for 2 to 4 breasts. Here’s what to do (it’s so easy):
- Season the Chicken
- Place in Baking Dish
- Add in Olives or Pepperoncinis, Mushrooms, Artichoke Hearts, Cherry Tomatoes, and Feta.
- Drizzle with Olive Oil or Avocado Oil
- Bake until Chicken Breast reaches 165 degrees Fahrenheit (or 170 degrees for thighs).
- Let rest for 10 Minutes, serve with Pasta, Rice, Quinoa, Spinach, or Steamed Broccoli.
So easy, delicious, and healthy!
Artichoke Chicken in Slow Cooker
I don’t use my slow cooker much. But when I do, here’s how:
- Place Chicken in Slow Cooker, along with the rest of the ingredients.
- Cook on Low for 3 Hours or until Chicken reaches 165 degrees Fahrenheit.
I have cooked a lot of over-done chicken in slow cookers. Be mindful of the size of crock pot you use in comparison with the amount of chicken and ingredients. A half full slow cooker is ideal. If it’s not quite full enough the chicken will cook in a hurry. If it’s too full, it will take longer.
Chicken Artichoke in Instant Pot
Instant Pots are great for cooking big cuts of meat in a hurry. You can also cook Chicken Breasts in an Instant Pot in 30 minutes. Joanne, of the Jo Cooks blog, has detailed instructions on how to cook chicken breasts in an instant pot.
Put all the extra ingredients in the pot after searing the breasts. If you don’t want to sear the breasts, just throw it all in the pot.
What to Serve with this Healthy Chicken Artichoke Recipe
There are lots of options to serve with this delicious chicken.
- Pasta: whole wheat or gluten free
- Low Carb: Cauliflower Rice, Steamed Broccoli, or Fresh Spinach
- Brown Rice
- Naan Bread
- Quinoa
If you need a quick sauce to gussy up rice, quinoa, broccoli or pasta, then whisk together olive oil, fresh lemon juice or white wine vinegar, your favorite spices, and s&p.
What to Do with Chicken Artichoke Leftovers
If you aren’t much of a leftover fan, then change it up a bit. Use the chicken from this meal as the protein in a salad. Furthermore, add in a few olives and tomatoes with the dressing above.
To store: place in an air-tight container in the fridge for up to 3 days.

Easy Healthy Chicken Artichoke Recipe in 35 Minutes
Equipment
- 1 Microplaner optional
Ingredients
- 4 Chicken Breasts or Thighs boneless & skinless
- 1 can Artichoke Hearts in water (drained)
- 1 cup Cherry Tomatoes
- 1 cup Olives Castelvetrano or your favorite
- 1 cup Mushrooms, sliced optional
- 1/2 cup Feta crumbled
- 2 cloves Garlic grated with microplaner or minced
- 2 tbsp Olive Oil extra virgin
- 1/2 tsp Salt
- 1/2 tsp Pepper fresh;y ground
- 1/2 tsp Oregano dried
Instructions
- Preheat oven to 400°F. Place chicken in pan and sprinkle with some salt, pepper, and oregano. Grate garlic over chicken and rub in.
- In the pan add artichoke hearts, 1 cup cherry tomatoes, 1 cup olives, 1 cup mushrooms, and 1/2 cup feta. Drizzle with 2 tbs olive oil, sprinkle with salt, pepper, and oregano.
- Bake for 30 minutes or until chicken breast registers at 165°F in the thickest part (170°F for thighs).
- Remove from oven, let rest for 5-10 minutes. Serve with pasta, quinoa, rice, broccoli, or spinach.
