Butternut squash isn’t something I make often. I don’t know why! It’s so easy to make, delicious, and full of health benefits. At first, butternut squash can look a bit intimidating. It’s grossly large and has a waxy skin that can be hard to cut through. Well, put on your big person pants, sharpen your knife, and just do it! You will love this roasted butternut squash recipe.

To start out, cut the ends off of the butternut squash. Next, you need to peel off the skin. I use a veggie peeler. If you don’t have a good and sharp veggie peeler, go buy one. They aren’t too expensive. The XO brand works great. I prefer this method over using a knife. I feel like i have more control of it with the veggie peeler. Do what feels comfortable to you. Once your squash is peeled: cut in half, and scoop out the seeds. If time allows, roast up the seeds, or discard. Now, cut your squash in 1 inch cubes, season, roast, add the finishing touch, and enjoy!
