Have you ever looked at the ingredients in commercial crackers? There are so many preservatives and added non-sense! One only needs a handful of ingredients to make a tasty cracker. Level up your next charcuterie board with these tangy Gluten Free Goat Cheese Basil Crackers. Or pair them with your favorite wine.

These Gluten Free Goat Cheese & Basil Crackers are also chock-full of protein and omega 3! Almond flour is my favorite thing to experiment with. I usually try to sprinkle in a little flax seed too, for that added boost of nutrition.

It only takes a few ingredients to make these tasty tangy goat cheese & basil crackers.

The key to making these crackers is making sure they are nice and cold before cutting. Shape your dough in a log. Stick them in the refrigerator for a few hours. If in a pinch for time, put them in the freezer for about 20 minutes, and they cut up real nice too. Cut them as thin as you can without losing the shape. The thinner they are the crispier they will be.

Special Equipment

A few kitchen tools are needed for this recipe:

  • Food Processor: This really helps bring the dough together without over mixing.
  • Microplane Zester: This tool is great for getting the garlic super fine. If you don’t have one, just make sure you don’t have any big bits of garlic.
  • Soft Cheese Knife (The kind with the holes in the blade): This makes cutting the cracker dough easier. If you don’t have one, use a thin sharp bladed knife.
  • Silpat Baking Mat: Use Silpat baking mats for easy release. There is no need to spray non-stick cooking spray with Silpat mats. If you don’t have these, a baking sheet and cooking spray will work just fine.

These Tangy Goat Cheese & Basil Crackers will level up your next charcuterie board. They are great for snacking, and pair excellent with wine.

Ingredients

  • 5 oz Goat Cheese – room temperature

  • 2 Tbs Butter – no salt, room temperature

  • 1 Garlic Clove – micro-planed or finely minced

  • 2 Tbs Fresh Basil – chopped

  • 1 tsp Salt

  • 3/4 cup Almond Flour

  • 1/4 cup All Purpose Gluten Free Flour

  • 1/8 cup Milled Flax Seeds

Directions

  • In a food processor, add goat cheese, butter, garlic, basil, salt. Pulse until ingredients just come together.
  • Mix together both flours and flax seed in a small bowl. Add flour mixture to the food processor and pulse until combined. The mixture shouldn’t be sticky.
  • Take out cracker dough, and place on a piece of plastic wrap. Roll dough into a log about 1-1/2″ to 2″ in diameter, and wrap plastic wrap around it. Place in refrigerator for 2 hours.
  • Once the dough is chilled. Unwrap from plastic. Using a thin blade knife (a cheese knife works great), cut the cracker log cross wise into thin pieces (as thin as you can get them). Wipe off knife with wet towel in between cuts.
  • Place cut pieces close together on baking sheet that is lined with a silpat mat or sprayed with cooking spray. Bake for 12-16 minutes, until golden brown. Let cool and enjoy!

  • Make sure cracker dough is cold enough to slice thin.
